Carbs That Are Great For MTHFR

Since I'm a baker, I had to find a way to reintroduce flour and rice back into my baking and back into my life. I found four great options:

 

1. I consume organic flour. I discovered that my local flour mill sells organic white bread flour. It's more expensive, and it's a "hard wheat" (designed for making bread), but it's not enriched. To test the theory, I bought some, took it home, and made a batch of cookies. I ate several cookies and waited patiently for my misery to amplify and my depression to rage. Guess what? It didn't! Say what?!?! I was delighted!

 

2. I consume Einkorn Wheat. Einkorn Wheat is an ancient grain that is highly compatible with the human body. My body really likes Einkorn wheat. This wheat doesn't taste like a lot of whole wheat flour does. It's a "soft wheat" (great for baking muffins and cakes) that is also non-hybrid which means that instead of the common 42 chromosomes found in whole wheat, it has a more-natural 14 chromosomes. Since I buy and grind the whole wheat berries, it also has more vitamins and minerals than wheat that has been ground into flour previously. I get my Einkorn Wheat berries from Young Living because I trust their rigid "50-years of no pesticides/herbicides/fertilizers" farming practices - which is 10 times the organic standard. Young Living also sells Einkorn flour, so even if you don't have a wheat grinder, you can still use this amazing carb source.

3. I consume organic bread flour mixed with Einkorn flour. This makes a really nice all-purpose flour. All-purpose flour is normally a 50/50 blend of hard wheat and soft wheat. By combining the organic bread flour I found at my local mill with the Einkorn Wheat I get from Young Living, I can make a really nice flour blend that is suitable for virtually all of my baking needs.

4. I consume brown rice and organic rice. Brown rice and organic rice are not enriched with folic acid.

5. I consume Spelt bread from a local baker. Spelt is a type of wheat.
